You could easily turn these into muffins--I think they&#039;d make a few more than 8 (maybe 10 or 11 muffins vs. 8 loaves).  Adjust baking time accordingly, too :)

Wow!  Thanks so much!  I have to admit that makes me smile, as I know virtually nothing about photography and my dime-store, point and shoot camera is just barely hanging on to its life. But since it&#039;s you asking, I will go along for the meme and post it as soon as I get my thoughts/photos together! :)

Avocados are awesome!  One of my very favorite foods.  Let me know how you like the recipe if you do give it a try!

I&#039;d guess you could use avocado as an egg substitute and partial fat substitute in many things--I&#039;ve used it in baked goods as well as savory recipes.  Like olives, avocados are high in monounsaturated fats, which actually stand up quite well to heat (way better than polyunsaturates such as corn oil).  Once it&#039;s baked, it much less likely to go bad, in fact--just like cooked fruits or veggies, I&#039;d imagine. I&#039;ve made this recipe a few times now and have also frozen the loaves with no ill effects.</description>
