		<description>Oh this salad is calling my name! Beets are one of my favourite vegetables and one of my favourite foods in general. I still can&#039;t believe that I went so many years only eating them once a year at a holiday dinner (the ones that come out of a can). Now of course I try to eat them all the time! And speaking of underdog vegetables, I finally tried celery root. Not a big fan of that one - I found it kind of bitter. Maybe there&#039;s a particular way it needs to be cooked? (I roasted it.)</description>
