Flash in the Pan: Grown-up Fig and Walnut Baked Apples

[Sometimes, you just want to eat something now. I’ve decided to offer a mini-post every once in a while, for a dish that comes together incredibly quickly or else is so easy to make that no recipe is required. Here’s today’s “Flash in the Pan.” (For other FitP recipes, see “Categories” at right).]
It’s astonishing to me how our tastes can change so dramatically as we age. Remember those things you loved as a kid which elicit apathy now? As a tot, I loved The Monkees. In my teens it was historical romances. In my twenties, I wore dark eye shadow and painted eyeliner across the base of my lashes. In my thirties, I dressed in black almost every day for three or four years in a row.
There’s no doubt my palate has changed over time as well. Foods I loved to eat as a child–saltwater taffy, Cap’n Crunch cereal, mellowcreme pumpkins or (a dinnertime favorite) a hillock of mashed potatoes with nuggets of hamburger cut up and hidden under it–all seem slightly repulsive to me now. Then again, many of the foods I abhored then are ones I adore today; to wit, parsnips, cilantro, and–as of two days ago–baked apples.
When I decided back in January to attempt a “cleaner” diet for a while so that I might reverse some of the holiday era choc-o-rama indulgences, I turned to a cookbook I’ve had for some time but have never really used: The Detox Cookbook and Health Plan, by Maggie Pannell. Hiding at the back, on the very last page, was a rather fetching photo of a lone baked apple, stuffed to the brim with chopped figs and walnuts.
Apple? Baked? I could feel myself recoiling, thinking, “Nawwww. . . . ” I mean, who eats baked apples? They’re granny food. They’re ulcer food. They’re nothing-else-is-in-the-house-so-I-have-to-make-do-with-this-dull-fruit food. Now, don’t get me wrong; I love raw apples and try to have one every day. But I’ve always found the concept of a baked apple to be rather meh.
Besides, apples are so common, so quotidien, so humdrum that they’re suffering from overexposure, like cupcake wedding cakes or Vivaldi’s The Four Seasons or Pamela Anderson’s cleavage. I mean, aren’t apples like the perma-date of fruits–pleasant, enjoyable, always there–but just not exciting enough to seek out for something exceptional? When I think of apples, all the old, hackneyed language comes to mind: Apple of my eye. One bad apple. An apple a day. The apple doesn’t fall far from the tree. Apple Paltrow-Martin.
I was also flooded with memories of baked apples from my childhood, and why I never liked them back then: plain, dowdy, as wrinkled as your frowsy neighbor’s housecoat. And yet, that photo beckoned to me. I found the final push I needed when I went grocery shopping a couple of days ago: I often buy marked-down packages of apples to cut up and serve The Girls along with their regular dinner. That day, I found three packs of six apples each, at 99 cents a pack. Usually, these bargain-basement fruits and veggies sport more than a few little bruises; but these packages were perfect–smooth, rosy, unblemished; pristine. Seriously, I couldn’t find a single nick or mark on any of the apples! It was a sign.
I went home and baked these apples. The recipe was ridiculously easy, with only 4 ingredients. And while they baked, I got dinner ready and even fed The Girls (they got the unbaked fruit).
I guess my tastes have matured now that I’m an adult. I loved these–they were stupendous. I’d say these apples are like the homely, bespectacled secretary in the 1950s movie who suddenly tears off her glasses, pulls the hairpin holding her bun and shakes her head, and then–mon dieu!–she’s beautiful! I now am officially smitten with baked apples. Baked apples are my hero!
I used Gala apples (that’s what was on sale) and the outcome was perfect. The contrast between the sweet, pliable stewed figs with their popping crunch, and the perfectly creamy, tart apple flesh was delightfully unexpected. And as the glaze baked and thickened up, it acquired a deep, intense orange flavor as well as a deep caramel hue, contributing a glossy, sticky exterior glaze to the skins.
I think I’d better try to eat baked apples at least a few times a week through the winter. I plan to have them as often as I can. I mean, who knows when my tastes might change again?

Gastronomic Gifts VI: It’s the Great Pumpkin, Butter*

*Or, Merry Christmas, Charlie Brown. Now Eat Some Delicious Spread.
[There’s just nothing like a homemade gift for the holidays. This year, with the purse strings a little tighter than usual, I’m determined to make at least a few in my kitchen–and thought I’d share my ideas in case you’d like to partake, too. ]
I know that pretty much everyone in the blogosphere (well, and the rest of the galaxy, too, come to think of it) has already made this spread. But hey, I’ve always been a late bloomer. And now, I’ve finally tried it, too. And it is so *&$@!% good that I had to include it as this (penultimate) Gastronomic Gift this year. (I’ve got one more planned, as long as we can shovel ourselves out of the *&$@!% 25 cm. (just under a foot) of snow that battered the city yesterday and I can get to the store).
Pumpkin butter is the perfect means to use up cooked pumpkin (or squash, to those of us in North America). It’s a great nut butter substitute if you’re trying to reduce fat and calories. Or if, like me, you’ve once again allowed the insidious holiday-time profusion of chocolate and chocolate-coated/ chocolate studded/ chocolate-molded/ chocolate-frosted/ chocolate flavored/ chocolate filled/ chocolate-related-in-any-way desserts that seem to reproduce of their own accord on countertops and dining room tables and candy dishes and office desks and buffets and coffee tables and bar tops and glove compartments and pockets and dessert menus to override your (wobbly at the best of times) self control, and you find that you’ve now consumed more chocolate in the past two weeks than the entire GDP of a small country, more than Big Brother’s secret stash in 1984, more than the exports from Switzerland at Valentine’s Day, more than the full contents of Willie Wonka’s factory–more, really than you’d rightfully expect any normal human being to ingest under any circumstances whatsoever in a lifetime, except maybe under threat of torture.
What? You mean it’s just me?
For some strange reason, I felt the need for a break from chocolate for a while (ahem). Now that I’ve made my own pumpkin butter, I can join the chorus and say that I, too, am smitten. It’s the perfect accompaniment to pretty much any carbohydrate with a flat surface (or even a somewhat bumpy one–have you tried this on rice cakes? Divine.)
But I must admit that my favorite use for the butter isn’t on toast, or a muffin, or pancakes, or any other solid food. I think I love it most blended (using my hand blender) in a tall, cold glass of almond or soymilk. Yum-mers!
It also makes a fabulous hostess gift, of course, and a wonderful last-minute present; it’s the perfect way to use up that final can of pumpkin purée that’s been biding its time in your cupboard since Thanksgiving.
This recipe (the ubiquitous allrecipes version) makes a pretty big batch, so you can scoop some away for home use and still fill two or three pretty little gift jars with the stuff to give away. If you can bear to part with it.

Pumpkin Butter
adapted from AllRecipes.com
Try this lovely alternative butter anywhere you’d spread jam or nut butter. It’s got no fat, with the bonus of holiday spices all year round.
3-1/2 cups (about 820 g.) cooked, puréed pumpkin
3/4 cup (180 ml.) apple juice [but personally I think OJ would be great in this]
2 tsp. (10 ml.) ground ginger
1/2 tsp. (2.5 ml.) ground cloves
2/3 cup (160 ml.) agave nectar (light or dark)
2 tsp. (10 ml.) ground cinnamon
1 tsp. (5 ml.) ground nutmeg
Combine all ingredients in a medium sized pot. Heat over medium-high heat until mixture boils; reduce heat to low and continue to simmer, stirring very frequently, until the mixture is thick and has darkened (the original recipe said 30 minutes, but mine took a bit more than an hour). This might also be a good time to pull out that old splatter screen if you have one, as the mixture tends to boil and pop a bit (my walls needed a good wipe-down after I was done).
Pour into clean glass jars and store in the refrigerator. Makes about 2 cups (500 ml.). Will keep at least 3 weeks in the refrigerator.

Last Minute Thanksgiving Ideas

I had intended a lovely post today, in honor of the upcoming Thanksgiving long weekend to the south of us. But time constraints (read: massive, unwieldly pile of essays and assignments to mark) have prevented me from following through. So I’ll just have to wait till the next batch of holidays in December to post about some new, frost-and-snow inspired, treats.
Instead, I thought I’d pull together a few recipes from previous posts that are suitably festive for a holiday table, or the breakfast table the following day (I’ve also got a few detox recipes on the blog–I’ll let you seek those out yourselves, as required). Most of these are fairly quick to make as well, as long as you’ve got the ingredients on hand.

Lucky Comestible 4(5): Raspberry Coconut Coffee Cake

[I thought it would be fun to run a little series over here at DDD: I’ll profile one one of my favorite foods, or a food that I’ve recently discovered and enjoyed, over several days. For this fourth edition, I’m focusing on Coconut. The series is presented on an occasional (and entirely arbitrary) basis, before I move on to the next lucky comestible. This is the last entry on coconut.]
I’m loath to admit it, but I’m one of those people who can’t leave well enough alone. I’ll be decorating a cake and think, “Oh, it just needs one more flower on there somewhere. . . ” until the top of the thing could pass for a Jackson Pollock with the words “Happy Birthday” meekly peeking through the splotches. I’m like those middle-aged women (oh, wait, I actually am a middle-aged woman) who don huge, dangly earrings and then wonder if they wouldn’t be complemented by a massive pendant necklace. . . oh, and this lovely, chunky bracelet. . .and must top it off with that favorite equestrian-themed scarf–and can’t forget the cute doggie brooch, of course. As a student, I’d sit planted at the desk and revise my in-class essays over and over, right up until the very last second when the bell rang (I mean, what if I had left early and later remembered a comma splice I’d neglected to fix?)
And then there’s that cringe-inducing conversation–you know, the one with your One and Only that goes something like this:
Scene: Evening. Ricki and the HH lounge comfortably on the sofa, engaged in animated conversation.
HH: . . . And then the guy says, ‘Yeah, maybe the sandwich on its own is good, but it’s the dill pickle that really makes it great!!”
Ricki: Ha ha ha ha HA AHA!! Oh, HH, you are just the funniest!! “The dill pickle really makes it great!” Hee hee. [Leans over to touch his arm].
HH: Har har hee hee. What a laugh, eh? Yep, the dill pickle. . . [stretches his arm around her shoulder.]
Ricki: Hee hee, soooo funny. [Smiling with adoration]: Oh, HH, I love you.
HH: I love you, too. [Smiles]
Ricki: [Pause]. Um, you know, I’m just wondering about something.
HH [Looking suspicious]: What?
Ricki: Well, you know, I’ve just noticed that I’m always the first one who says, “I love you.” Why is that?
HH [No longer smiling]: Well, that’s not true.
Ricki: Really? When’s the last time YOU said it first?
HH: Um, I dunno. . . last month, probably.
Ricki: No, honey, I’m sure it wasn’t last month. Because remember our anniversary? And remember when the next weekend, we went out with Gemini I and her hubby? Well, when we got home, we were sitting on the couch like this, and–
HH: [Heavy sigh] And you know, we were having such a nice moment there. I guess you just couldn’t leave well enough alone, could you?
Hmmm. This irresistible tendency to push the boundaries manifests itself in my prowess in the kitchen as well (no, no, I’ve moved off that scene of me and the HH now! I’m talking about cooking, silly!). I love to tinker with recipes and will frequently alter them considerably, even without trying them in the intended form first. After a lifetime of baking (okay, minus the first 6 years of my life), I’ve more or less discovered what works and what doesn’t. And if I attempt something creative that doesn’t quite meet my expectations, I don’t take it personally (unlike my reaction to the HH’s lack of amorous expressiveness).
One of the issues that’s come up in discussions with the recipe testers for my upcoming cookbook is the matter of substitutions in the recipes. Of course, when the testing process began, I assumed everyone would follow the recipes to a “T.” However, in reality, it’s not always possible for everyone to acquire the exact ingredients; or they might not have everything on hand; or they might not own the perfectly-sized pan. It got me thinking, “how often do I follow a recipe exactly?” The answer? To quote the infamous book title, less than zero. (Okay, maybe that’s an exaggeration; maybe it’s just a little less than less than zero, more like a little more than never).
But you know what? That’s perfectly fine. Really, if you feel comfortable with cooking or baking and want to introduce minor alterations, that’s terrific; the result may in fact be something even better than the original. The trick is knowing what to substitute, and when it will work. Spelt for all-purpose? No problem. Agave for sugar? Fine, with adjustments. Cherry for pumpkin? Probably not. And chocolate for eggplant? Well, that’s just wrong. (Though, of course, you might like to actually combine the two for a terrific result instead).
When I read about Claudia’s tantalizing Strawberry Coconut Coffee Cake on Vagrant Vegan, I knew immediately that I had to make it. True to form, I adapted the recipe to my own needs and on-hand ingredients, using Sucanat instead of sugar, spelt instead of wheat, and so on. I also decided to bake the cake as an 8 x 8 inch square instead of a 9 x 13 rectangle, as it’s just the HH and me here (and we don’t give The Girls anything too sweet). Then, when I finally went to bake it, I realized strawberries were already out of season–but I had frozen raspberries in the house; why not use those? (and besides, don’t cooked raspberries just impart the most sensational fuchsia hue?).
In the end, my version isn’t exactly like the original, but this cake still turned out spectacular. I think the base is a perfect coffeecake batter, one that can handle many deviations and still taste great (which is, after all, the mark of a winning recipe). The cake itself isn’t too sweet, and it offers up a juicy burst of tangy raspberry in every bite. Since coconut is one the HH’s favorite foods, he was drawn by the aroma as it toasted in the oven, and couldn’t wait for his chance to taste it. The verdict was unequivocally positive–he gobbled up a piece and then asked for another.
“That was delicious,” he enthused. “Maybe the cake on its own is good, but it’s the coconut that really makes it great!” I could have kissed the guy.
He smiled. “I love that cake!” he said. What? Did he say, “love”?
“Um, you know, I’m just wondering about something. . .” I started. But then I quickly shoved a large chunk of cake in my mouth and swallowed it.

It seems like another lifetime now, but the year after my starter marriage
ended, I lived in a townhouse with my dear friend Gemini I. Shortly after the furniture was placed and the boxes unpacked, we began to negotiate the rules of housework, grocery shopping, and TV usage when we got to chatting about food. I remember asking, “Do you like cous cous?” (In those days, I ate it all the time, though it’s pretty much verboten now since I don’t eat wheat). I was taken aback by her answer, which, at the time, I found a little odd.
“Well, I suppose I do,” she responded. “There are times when I’ll cook it every day for two weeks, but then I might not touch it or even think of it for 8 or 9 months.” I couldn’t imagine ignoring a food I actually enjoyed for that long (and chocolate? Well, that one would be calculated in hours–nay, minutes–rather than days or weeks).
These days, though, I understand exactly what she meant. When one maintains a food blog, the quest for the novel and atypical dish never ends. This pursuit sometimes leaves old favorites languishing in the dust–or at the back of the cupboard (or both, in the case of our cupboard). On the other hand, I might whip up something new from a recipe I found on another blog, and enjoy it so much that the HH and I will feast on said dish several times during the next week. And the following week. In fact, we might just consume that comestible every second or third day for two to three weeks (which does provide several useful photo-ops, after all)–and then dump it unceremoniously, just as Chaser dumps her squeaky ball (ad nauseum, I might add) at my feet. Once I’ve gotten my fill, I move on, seeking the next culinary encounter.
Well, I’m sure I’ve mentioned before that I often find myself with a surplus of overripe pears in the house, as I did a couple of evenings ago. Since the HH refuses to share in the burden of eating fruit (hey! That could be the title of Michael Pollan’s next tome: The Burden of Eating Fruit: An Exposition on Overripe Organic Produce), I’m always on the lookout for tasty recipes with pears, before they become too soft and squishy, too oozy, too yellow-flecked-with-brown. Our freezer is already bursting with chopped, frozen pears, so I needed to cook up these babies–and fast.
It was then I remembered an erstwhile favorite, one that we consumed for a spell and then promptly forgot. It’s from one of my favorite cookbooks, Green by Flip Shelton. From what I understand, Shelton is kind of like an Aussie Rachael Ray, and isn’t taken very seriously as a chef (what’s that bogan doing cooking biscuits on the barbie? What a dag! Well, she’s still ace to me. G’day!). The recipe sounds like an incongruous combination of ingredients (though not as incongruous as radishes, olives and grapefruit), mixing pear and parsnip with sautéed leeks, but the final result is incredibly tasty. Fragrant, slightly sweet from the pears and slightly peppery from the parsnip, with a velvety smooth, light texture. Yum-O!
And since this soup features both fruit and, well, soup, I’m submitting it to this months’ No Croutons Required, a monthly event hosted alternately by Holler (this month) and Lisa, which asks us to cook up either a salad or soup with fruit as a main ingredient.
Oh, and before I sign off, I really must thank all of you for being so understanding and so polite. I mean, it’s painfully evident that I was a total bust at the ACD this time round (okay, maybe not a TOTAL bust–I did last almost 2 weeks). And yet you’ve all had the diplomacy and tact not to mention it! For that, I am grateful.
And while I’ve decided this may not have been the best time to embark on an even more restrictive diet (school starting up, cold weather coming, cookbook calling), I do still try to eat foods that would fit within the parameters of the diet as often as possible, perhaps minus one or two ingredients. Well, turns out this fantastic soup could easily qualify as an anti-candida meal, even without trying (if you’re following the version that permits non-tropical fruits, that is). It’s also a very simple, very nourishing concoction that offers fabulous fiber from the pears, a hit of extra calcium from the parsnips and a satisfying early autumn tummy-warming. You may even decide to make it again and again–at least, for a couple of weeks or so.

Who could have ever guessed that our summer would FINALLY arrive on Labor Day Weekend? The weather this past weekend was glorious: brilliant sunshine, sky entirely unsullied by even a speck of cloud, so blue even the dogs seemed able to perceive its piercing azure, colorblind or no. The temperature’s been hovering at around 28C (that’s high 80s, my American compadres!), and–best of all–no humidity! What a perfect way to usher out the summer as students prepare to get back to school tomorrow and parents prepare to shout obscenities at all the extra drivers on the newly traffic-clogged roadways.
It does seem strange to be bidding summer adieu when it feels as if we never actually had a real summer this year to begin with. Let’s see: before this weekend, I can recall a total of three sunny days. And it’s official: this summer, we surpassed every known record for rainfall in Ontario between June 1 and August 31st.
And so, to celebrate the late arrival of warmth and to send off the season that never was, I thought I’d present this heavenly soup. It’s one I mentioned waaaaay back when I ran the last Lucky Comestible series on avocados. As the warm weather dissipates and the stealthy chill of autumn returns with its crisp sheets in the evenings and dewy sprays of frost on car windows each morning, this is a soup you can make to remind you that, before you know it–a mere 293 days from now–the warm weather will finally return. That is, if there’s actually a summer next year.
The soup is creamy, rich, and very refreshing after an afternoon in the sun. It’s also great as a quick dinner if you’ve been taking advantage of one of the rare balmy afternoons left in which you can go outside in just a T-shirt and shorts.
So long, Oh Blazing Sol of the summer. So long, lush, humective grasses and tomato blossoms, amazonian mint, purple clover and sundry weeds in a multicolored tangle like some crazy knitting basket in my vegetable garden. So long, little Chaser slurping at the hose. So long, G & Ts on the patio, tan lines on my shoulders, shoes slipped on casually with no socks. So long, coveted, much cherished, far too short and ever appreciated summer weather.
Summer, we hardly knew ya. Sniff. Boo hoo. But now, there’s soup. . .

There are certain food combinations that strike one as just so naturally compatible, you couldn’t imagine them any other way. Consider the seminal chocolate and peanut butter, for instance: could there be a happier marriage of sweet, salty, creamy, smooth, and enticing? Or what about vodka and orange juice, or pancakes and maple syrup, or french fries and gravy, or macaroni and cheese, or apple and cinnamon or–I could go on. On the other hand, it’s always gratifying to discover alternate matches that may seem bizarre at first glance, yet actually work once you give them a try (funny, why did the HH suddenly come to mind?)
When I was an undergraduate at the University of Windsor, my wacky room mate had a friend who ate her pizza with peanut butter where the tomato sauce should have been. She swore it tasted great (I declined to sample a slice). During my childhood in Montreal, my friend Gemini II used to eat liver sandwiches with cream cheese (again, I believe I passed on that one). The well-known duo of french fries and mayo always struck me as odd until I was served sweet potato fries with mayo at one of my favorite vegan restaurants (which, of course, prompted me to head straight home and prepare spicy sweet potato fries with avocado mayonnaise, and now I’m hooked). I’m sure you’ve got your own personal favorite fixings that, any disparaging comments aside, you adore nonetheless (and please feel free to ‘fess up in the comments section!).
Well, as some of you may recall, the HH and I have just a smidge of surplus mint around here this summer. Yes, indeed, I’d venture to say that my garden is in mint condition! I’ve been concocting as many beverages, appetizers, dips, entrées or desserts containing the stuff as my little hands can muster, and even thought I was doing pretty well until the other day when I stepped round the corner of our house and saw that those darned wanton herbs had been propagating over night–it appeared as if I’d used nary a leaf!
And so, by dint of mint, I was forced to come up with yet another recipe showcasing the stuff. Which actually worked out perfectly, since Holler and Lisa’s No Croutons Required event this month requests a salad focusing on a favorite herb. Well, if by “favorite,” they meant “so much that I could rip bagfuls from the yard and still have enough left to freshen the breath of the entire town of Gilroy, CA on July 25, 26 & 27th in the month of July”; or “so much that I will have to start using it as packing filler when I mail trunks of fine china or glassware across the Atlantic” or “so much that even the thought of mint makes me feel a bit queasy, which, as it turns out, is actually okay, since mint helps to aid in proper digestion” or “so much that I will have to cook at least one dish with mint in it every single day for the forthcoming 11 months, until it sprouts up again next summer, just to use it up”–well, if that’s what they meant by “favorite herb,” then yes, mint is indeed my favorite, and definitely deserves to be featured in my submission to the event.
I do enjoy a good fresh peach, but when I saw three of the fuzzy spheres nestled in our organic produce box a couple of weeks ago, I almost despaired. A properly ripened peach is a wonderful thing, but there seems to be a terribly small window of maturity wherein peaches are at their apex of flavor and texture–firm, juicy and sweet-tart–before they quickly decline into dry, powdery mush. If not eaten precisely on the right day (sometimes the right hour), the peach becomes unappetizing at best, perhaps suitable for a sauce or baked good; at worst, it’s both tasteless and unpleasant, and destined for the compost bin.
Given the capricious nature of the downy stone fruits, I decided a salad would be the perfect context in which to combine it with other ingredients that could overshadow their potentially less-than-stellar consistency. Mint was a given, of course, and for some reason, I felt that cucumbers would also suit the flavor palette. The final addition was sweet corn kernels–partly because they just called, “pick me!” and partly because I thought the color would work well with all the other summer hues, which always elicit a desire in me for fresh fruits and veggies.
In the end, we both adored this random combination of ingredients and have now consumed it four times in the last 2 weeks. The peaches are tart and luscious (and even the sub-par slices soak up the dressing and seem more juicy); the cucumber is cold, watery and mild; the corn is crisp and sweet; and the mint is pungent and peppery, all culminating in a perfect pastiche of color, flavor and texture.
It’s true, peaches, corn and mint may not have been born for each other; but their arranged marriage in this dish makes for one very harmonious union.

Our recent visit to Montreal last week, like most of our road trips, involved a hamper of food to stave off starvation en route. As is my wont, the night before travelling, I basically ransack the kitchen and tote along anything that’s hardy enough to last the voyage. The list of provisions usually includes any leftovers from the previous two days, a stash of homebaked scones/muffins/bread, a container of homemade trail mix and any transportable fresh fruits or vegetables that would otherwise transform themselves into unrecognizable mush, green fuzz, or oozing fermentation if left to their own devices while we’re away.
Well, since Fridays mark our regular organic box delivery, and since we departed on a Saturday morning, there was plenty of produce to accompany us. We returned the following Monday to a near-empty refrigerator. I was poking around for a snack that evening when I first noticed it: a plain brown paper bag propped on the counter, its wrinkled top curled under in a makeshift closure. Feeling fairly certain that the HH hadn’t ordered something untoward off the Internet (or at the least, that he wouldn’t leave it on the counter in plain view if he had), I headed over to peek inside. And then, with a pang of remorse, I remembered: it was the bag of fresh plums from our organic box!
I’d completely forgotten the shiny, plump and purple spheres before we’d left, and they had started to wither a bit inside the paper bag (which, as you know, actually encourages fruit to ripen faster). They appeared to be nearing the end of any period of natural firmness left in them (sort of like Madonna’s face these days). What to do?
I could no longer eat them raw, but I was darned if I would toss them, either. Our first plums of the season–I knew I just HAD to find a good use for them! Besides, neither the HH nor I are huge plum fans, so we most likely wouldn’t have consumed them all in any case. I figured I could make jam, but that seemed like a cop-out. I could dehydrate them and convert them into prunes (the better for my recent diagnosis), but I’d just bought a 500-gram bag of the things the week before.
I thought about it for a moment. Then, as I tend to do when faced with most quandaries in my life, I opted for my usual course of action: bake something.
I was sure I’d seen a recipe on one of the blogs I regularly frequent (the list now tops 150–must update that blogroll!), but when I did a Food Blog Search, I couldn’t find it again (though Dorie Greenspan’s version made several appearances). I had some extra cornmeal in the cupboard from another recipe I’d made (more on that in a later post), so decided to combine the two and form a hybrid of sweet cornmeal muffins and plum cake.
I was very pleased with the final appearance of the experiment, sort of like a coffee cake studded with mounds of gorgeous, glossy purple and garnet fruit-gems. Well, the cake looked pretty, but how did it taste?
I cut a huge hunk of the still-warm confection for the HH and trotted outside, where he sat, dogs panting at his feet on our patio, reading the outdated newspaper we’d forgotten to cancel before the trip.
“Whoa, I can’t eat all that!” he wailed when he saw the size of the slice. “That’s way too much for me.”
“Don’t worry, that’s fine,” I acknowledged, “I’ll share it with you. Just let me go inside and get my book.”
I headed back inside to retrieve my latest read, Shopgirl by Steve Martin (Steve, man! There’s a reason for all those creative writing class clichés. “Show, don’t tell. Show, don’t tell.” Did you miss the intro lecture or something?). By the time I returned to the yard, the HH’s plate was empty. All that remained of the cake was a subtle smudge of pink juice and a few errant crumbs, the only evidence that the plate had ever held anything at all.
“Where’s the cake?” I asked. He shrugged a little, looking positively sheepish.
“It was so good, I just ate the whole thing,” he said.
Now, how could I possibly balk at that? Even as I headed back in a second time to rustle up my own slice, I was smiling. And I felt no regret whatsoever about forgetting those plums at home, after all.

Neither too sweet nor too delicate, this cake is perfect for breakfast or brunch as well as a summertime dessert. If you prefer muffins, simply chop the plums after removing the pits and fold into the batter before spooning into muffin tins instead of the flan pan (and bake for slightly less time).

Well, I’ve just completed my second day on my Total Health cleanse, also known as the Grain Drain.
(I must interject here just to say thank you to everyone for your great comments, suggestions and encouragement–I am truly blown away by all the positive wishes and love hearing from you all. And it makes a huge difference to know that the support is out there!)
After two days of eating this way, I’m feeling a tad self-reproaching. You see, so far, I’ve found the diet nowhere near as difficult as I’d anticipated. In fact, it’s been downright easy–one might go so far as to call it enjoyable, even. (I know–I was shocked, too!)
I mean, what could be wrong with a fresh and juicy Earth Bowl for breakfast? Or a classic Three-Bean Salad for lunch? In order to keep my blood sugar levels steady, I’ve been munching on nuts and seeds, baby carrots, prunes (or, as they’re now called, dried plums) and wee bits of Cocoa Nibbles. I feel lighter and my allergies seem to be diminishing. Whoo hoo!
And then, most unlike Eliot’s eponymous poltroon, I most certainly did dare to eat a peach. Several, actually, all blended into a smashing soup. That, followed by a serving of Red Pepper stuffed with Raw Asian Pâté, (recipe in a future post), and dinner was rather spectacular. So, let us go then, you and I, and I’ll fill you in on all the details of Chilled Peach Soup with Cashew Coconut Cream.
Last week, on one of those grey days when the fog rubs its back upon the window-panes, we received a true harbinger of summer: four plump, downy, rosy peaches in our organic produce box. I was so thrilled that I devoured one immediately before I realized there will be time, there will be time to eat more of them throughout the summer.
As it happened, I’ve been on a bit of a library kick lately. Maybe it’s the ever-increasing tower of unread magazines that waits patiently in the corner of my office; maybe it’s my newfound frugality; maybe it’s the fact that I had to go get this month’s book (About Alice by Calvin Trillin) for my book club; whatever the reason, I found myself at the local library and decided to drop by the cookbook section. And there, after reading a variety of recipes (the dishes measured out in coffee spoons), I happened upon The Artful Vegan by Eric Tucker et al.
Tucker is executive chef at the famed Millenium restaurant in San Francisco, one of the very first vegan restaurants to introduce elegant, exciting and innovative cuisine for vegans (and one of the places on my list of “must-visit”s). I did have the enormous pleasure of sitting in the audience while Tucker demonstrated several recipes a few years ago at the inaugural Vegetarian Awakening conference; it was a revelation to watch him tame a tomatillo, pipe aïoli, or wrangle a fennel bulb. Everything he made was visually stunning and entirely delectable. (And even after the sampling, the cups, the marmalade, the tea–it would have been worthwhile. Oh. . . perhaps it’s the perfume from his Five Spice Watercress that makes me so digress? ).
Many of Tucker’s recipes are multi-faceted, multi-tiered, multi-stage affairs that require three days of preparation and innumerable specialty utensils to accomplish; the true appeal of his cookbook is that it allows you to gaze in awe at the culinary gymnastics his creations represent. And yet, as luck would have it, about midway through the book was a recipe for a chilled peach soup with a rosewater cashew cream. And best of all–it was perfectly accessible to a home cook! I bit off the matter with a smile, thinking this soup would definitely be worthwhile.
Preparing the soup couldn’t be easier–if not for the cashew cream accompaniment, I would certainly designate this a Flash in the Pan recipe–and it is entirely transporting when you taste it.
I made quite a few changes to the original recipe, so I’ll print my own version here. The soup is intensely fruity, with a slight sour note balanced by the hint of sweetness in the cashew cream topping. It is entirely refreshing on a smoldering summer day. This soup fairly hums “summer.” And even though there’s nothing in it that The Girls must avoid, this soup was too good to share.
(“Yes, Mum, I did hear the peach soup singing. But I do not think that it will sing to me. . . it did look good, though.”)
Okay, enough with the Prufrock. . . just don’t get me started on Nabokov’s peach reference!
Since this recipe hails from a truly “gourmet” cookbook and is also extremely low-cal (only 53 calories per serving, according to The Artful Vegan), I thought it would be the perfect submission to the Fat Chefs or Skinny Gourmets event, hosted by Ben of What’s Cooking and Ivy of Kopiaste’.
